Amberjack is an Atlantic game fish, most often found in the warmer parts of ocean. There are many types of amberjacks, including greater amberjacks (Atlantic), lesser amberjacks (Atlantic) and the banded rudderfish (Atlantic).
Amberjacks are voracious predators, which feed on squid, fish, and crustaceans, and are thought to spawn offshore throughout most of the year. Amberjack, an extra lean fish, has a firm texture, with white meat that has a mild flavor.
We started out early on a Thursday morning, cruising out past Sanibel Island to see what treasure we could haul in for the day’s catch.
Justin pulled in a grouper and Mike hooked
a tuna but it fell off his line. An hour passed. Another hour passed. The sun was making it’s way down towards the horizon when the reels started spinning. We must of hit a school of amberjack, because the guy started pulling
them in left and right! After the smoke had cleared, we were headed home with seven amberjack in the boat and a happy and
tired crew!
